Hawaii Butter sauce, also known as "Hawaiian Butter sauce" is a term that is just called butter sauce in Hawaii from locals, because it is seen as disrespectful to local culture when it is called “Hawaiian”, because food categories are taken seriously in the islands. To be respectful to the cultural belonging, sometimes even to the point of the time period of the cuisine. The term “Hawaiian Butter sauce” comes from the early days where tourists who went over to eat the food and brought back their stories to the mainland calling it Hawaiian Butter Sauce.
These dishes with butter sauce were eaten at lunch wagons in the 1990s that served up garlic shrimp, rice, lemon, and fish with seasonings. This would make a rich butter that would be used to marinate, cook with, and use to add flavor to vegetables by tossing it up with it. Hawaii’s favorite Hawaii cuisine butter sauces also have Italian influences as well as local seasoning: Scampi Garlic Butter, Lemon Pepper Butter, Chili Peppah Butter. Butter Sauces go back farther than the lunch wagons that served shrimp, but also from the time butter was used in many french dishes that spread amongst hotels. There was a variety of butter sauces for a long time in the homes too where people who used butter for cooking where they would add it to eggs, spam, burgers, and steaks, for a nice crisp. These sauces would have a following at home and at sports games meet ups where people could be seen having such sauces on: Fries, Popcorn, and Bread. Hawaii really has interest in butter since the good old days with cooking many things with butter as well as pork fat to further flavor dishes at home alongside oils. It was so popular that there was a popular saying that people would say “Mo Buttuh mo bettah!” in the 90’s that was originally said by HRC Chef Sam Choy. Seafoods also have some butter sauces that are made for grilled foods with many fishermen who would cook fish and pour butter on it after it was done, steam oysters on the grill in butter sauce, and dip shrimp in it and eat it with rice. Some of these sauces are influenced by shoyu-sauce and those sorts of sauces are a bit on the salty side with the rich flavor of butter. The basic sauces are: Aloha Shoyu Butter, Teriyaki-Sesame Butter, and Tabasco-Shoyu Butter. And more recently in the 2010’s there were Hawaii-cajun butter sauces, like: Hawaii Garlic Butter, Hawaii Parmesan Butter, Hawaiian Chili Pepper Cajun Butter Sauce (red), Hawaiian Cacao Pepper Sauce (brown), and Onion Lemon Butter Sauce (yellow)
