In Hawaii, the day is about freedoms and one of those choices of freedom is how to what is celebrated. It leaves it up to the personal decision of the ohana (family) to decide what their connection is to the day itself have it be the past or something current to lead things into the future. Much of Hawaii existed Pre-America and still have a difficult relationship celebrating it, especially in the harder times with some people in America are Free, and some are not as Free, and then there is the subjective feelings of the past and the present, which also includes foods in history that really changed Hawaii’s history for better or for worse. With many people identifying both as Americans and as Locals who respect the past its all about not excluding cultures by putting the limelight on just American cuisine and have a wide range of dishes while enjoying the beaches and the fireworks shows.
Hawaii Tourism works with all sorts of businesses that bring in multiple fireworks shows, parades, concerts, and special menus that really sell the main points of: Honoring Military to involve the Military Families, Independence by using “Independence Day” for travel marketing, Excitement of Fun Filled Events without really much explanation at times… Many of these people may not have spent a long time on the islands as in a few weeks a few months or a year, but those in the tourism business mostly are looking at business predicting on how these categories of travelers will spend their money while in Hawaii temporarily, visiting, or short-term living. So depending on the audience will depend on the food, but if it were up to them it would be a gourmet feast of: Butter Scallop Skewers, Chopped Brisket Sliders, Teriyaki Pineapple Chicken Sliders, Stuffed Crab Cakes, Smoked Salmon, Ono (wahoo), Shrimp Ceviche, King Crab Spinach Dip w/ Chips, Chocolate Fudge Brownies, and Chocolate Dipped Macadamia Nut Cookies. And while these are all good for the tourist looking for something a bit higher class and made like a theme park of Hawaii paradise it might not be the Experience for all visitors. Some Visitors, especially in modern day, might want lightly explore a more authentic Hawaii Fourth of July Weekend. That being said the dishes are similar to what locals call “The Waikiki Experience” of Fourth of July as one sort of draw for Tourists, but Military Families who had a bit of time to look around have other options to ease into foods of Fourth of July and Hawaii Grilling Culture. Certain eateries and caterers will make sure to have several menu options for people on Fourth of July based on how adventurous they want to be with how much familiarity are in their ordered dishes and some additions that might be more adventurous and local. When looking around at places with specials or peoples personal lists there are some patterns as to what is served that will be listed. There might be for example Three packages to choose from: Package (1) might be familiar Hawaii foods with: Hamburgers, Corn on the Cob, Rodondos Winners, Potato Macaroni Salad, Macaroni Salad, Maui Onion Chips, with Passion Orange Guava. Package (2) might be more typical of a July 4th American spread: Chicken Wings Buffalo Sauce, Mac and Cheese, Cole Slaw, BBQ Chicken, Baby Baby Back Ribs, Baked Beans, White Rice, Mashed Potatoes and Gravy, with Dr Pepper. While Package (3) could be slightly more Hawaii: Slow-roasted Prime Rib, Roasted Red Potatoes, Roasted Asparagus, Grilled Mahimahi, Mango Salsa, Scallion Fried Rice, Grilled Teriyaki Steak, Garden Salad, Banana Bread, Huli Huli Chicken, and Garlic Mashed Potatoes. Those who identified as American and respected history being a family rooted in Hawaii would look for recipes and check to see what others were making in the neighborhood to make it feel more local, less touristy, and less offensive by taking out the pineapple from the menu. Everything would be done pot luck style with the hosting family making the Grilled Meats with those joining in for the meal would bring the sides, drinks, and starches. The menu would have American foods, American-influenced foods, and Local Foods like: Hawaii-style Potato Salads (Potato Salad, Sweet Potato Salad, Breadfruit Salad), Grilled Rack of Pork Ribs, Grilled Teriyaki Chicken Quarters, Teriyaki Hamburger with Hawaii Taro Sweet Bread Rolls, Pork Sliders, Pocho Hot Dogs (Purity), Long-grain White Rice, Mashed Potatoes and Gravy. Meanwhile those wanting to dive right in may ask for suggestions from Local people and what they are having. Local people really do have their list of things to buy as its a day of relaxing from the daily chaos and relaxing and sometimes even camping. They are going to head to a persons home to talk story and eat, or to the beach to set up the tent and hibachi to see fireworks, rent a hotel room for a better view and a restaurant experience, or just go somewhere and order a Hawaii barbecue plate lunch. These menus were not always the same and the menus of items people prefer have changed over the years, but favorites that stuck around for the Fourth of July would be: Hawaii Hamburgers with Loves Hamburger Buns, Grilled Red Hot Dogs, Grilled Vegetable Sticks (mushroom, onion, zucchini), Grilled Prawns, Grilled Palani with Mayonnaise, Grilled Tako (octopus), Wonton Chips, Macaroni Salad, Sticky White Rice, Chow Mein, Kalbi Short Ribs, Corn on the Cobb, Banana Bread Pudding, with cooler filled with Various Poke.
